Roasted Pumpkin Seeds
Ingredients
1 cup pumpkin seeds
canola oil
salt, to taste
Your choice of seasonings:
2 teaspoons smoked paprika plus a pinch of cayenne pepper
OR
1/4 teaspoon curry powder plus a few grinds of black pepper
OR
1/2 teaspoon chili powder plus 1/2 teaspoon chopped chipotle in adobo
Directions
Scrape the seeds out of your pumpkin, then separate from the stringy pulp.
Rinse in a colander, then shake dry.
Spread out 1 cup of seeds on an oiled baking sheet.
Bake for 20 minutes at 300 degrees.
Let them dry, toss with a little canola oil and a few pinches of salt.
Now add your choice of spice mix:
2 teaspoons smoked paprika plus a pinch of cayenne pepper
1/4 teaspoon curry powder plus a few grinds of black pepper
1/2 teaspoon chili powder plus 1/2 teaspoon chopped chipotle in adobo
Return to the oven until crisp, 15 or 20 minutes.
Let cool and enjoy this delicious and nutritious fall snack!
