Roasted Pumpkin Seeds

Ingredients

1 cup pumpkin seeds

canola oil

salt, to taste

Your choice of seasonings:
2 teaspoons smoked paprika plus a pinch of cayenne pepper

OR

1/4 teaspoon curry powder plus a few grinds of black pepper

OR

1/2 teaspoon chili powder plus 1/2 teaspoon chopped chipotle in adobo

 Directions

  1. Scrape the seeds out of your pumpkin, then separate from the stringy pulp.

  2. Rinse in a colander, then shake dry.

  3. Spread out 1 cup of seeds on an oiled baking sheet.

  4. Bake for 20 minutes at 300 degrees.

  5. Let them dry, toss with a little canola oil and a few pinches of salt.

  6. Now add your choice of spice mix:

    • 2 teaspoons smoked paprika plus a pinch of cayenne pepper

    • 1/4 teaspoon curry powder plus a few grinds of black pepper

    • 1/2 teaspoon chili powder plus 1/2 teaspoon chopped chipotle in adobo

  7. Return to the oven until crisp, 15 or 20 minutes.

  8. Let cool and enjoy this delicious and nutritious fall snack!
