The Easiest (and Tastiest) White Bean & Chicken Chili

This weekend we made a large batch of the world’s best White Bean Chicken Chili and have been eating it all week long. It’s the perfect meal in our humble opinion so we wanted to share it with you!

White Bean Chicken Chili

1 large onion, chopped

3-4 cloves garlic, chopped

2 tablespoons vegetable oil

1 lb organic chicken, diced

1 can (16oz) Great Northern beans, drained

1 can (16oz) Cannellini beans, drained

1 can (8oz) green chilis

1 can (16oz) chopped tomatoes w/ liquid

2-4 cups chicken broth

1/2 teaspoon salt

1 1/2 teaspoon cumin

1 teaspoon oregano

Dash of cayenne


Sauté onions & garlic in oil until soft. Add all other ingredients. Bring to a boil and then simmer for 30 minutes. OPTIONAL: Add diced avocado, Cholula hot sauce or shredded cheese as a topping.
