Fish Tacos
Ingredients:
1 lb firm white fish (such as tilapia or cod)
2 tablespoons olive oil
2 teaspoons chili powder
1/2 teaspoon ground cumin
Salt and pepper to taste
8 small corn tortillas
1 cup shredded purple cabbage
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup chopped fresh cilantro
1 avocado, sliced
Lime wedges, for serving
Instructions:
Preheat the oven to 375°F.
Place the fish in a baking dish and drizzle with olive oil.
Sprinkle the chili powder, cumin, salt, and pepper over the fish and rub it in with your fingers.
Bake the fish for 15-20 minutes or until it is cooked through and flaky.
Meanwhile, warm the tortillas in the oven or on a griddle.
Assemble the tacos by placing a piece of fish on each tortilla, followed by shredded cabbage, diced tomatoes, red onion, cilantro, and avocado slices.
Serve with lime wedges on the side.
