Grilled Shrimp Skewers with Pineapple Salsa
Ingredients:
1 lb of large shrimp, peeled and deveined
2 tablespoons of olive oil
2 cloves of garlic, minced
1 teaspoon of paprika
1 teaspoon of dried oregano
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1/2 pineapple, peeled and diced
1/2 red onion, diced
1 jalapeño, seeded and diced
1/4 cup of fresh cilantro, chopped
Juice of 1 lime
Instructions:
Preheat your grill to medium-high heat.
In a bowl, mix together the olive oil, garlic, paprika, oregano, salt, and black pepper. Add the shrimp and toss to coat evenly.
Thread the shrimp onto skewers, making sure they're not too crowded.
Grill the shrimp skewers for 2-3 minutes on each side, until they're pink and opaque.
In another bowl, combine the diced pineapple, red onion, jalapeño, cilantro, and lime juice to make the salsa.
Serve the grilled shrimp skewers with the pineapple salsa on the side.
