Autumn Harvest Salad

 

Colorful and nutrient-packed, this salad combines seasonal fruits and vegetables for a delicious, crisp bite.

Ingredients:

  • 2 cups mixed greens (like spinach, arugula, or kale)

  • 1/2 apple, thinly sliced

  • 1/2 cup roasted beets, sliced

  • 1/4 cup pomegranate seeds

  • 1/4 cup goat cheese, crumbled

  • 1/4 cup walnuts, toasted

Dressing:

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp honey

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, toss greens, apple, beets, pomegranate seeds, goat cheese, and walnuts.

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Drizzle over the salad just before serving.
