Autumn Harvest Salad
Colorful and nutrient-packed, this salad combines seasonal fruits and vegetables for a delicious, crisp bite.
Ingredients:
2 cups mixed greens (like spinach, arugula, or kale)
1/2 apple, thinly sliced
1/2 cup roasted beets, sliced
1/4 cup pomegranate seeds
1/4 cup goat cheese, crumbled
1/4 cup walnuts, toasted
Dressing:
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey
Salt and pepper to taste
Instructions:
In a large bowl, toss greens, apple, beets, pomegranate seeds, goat cheese, and walnuts.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper. Drizzle over the salad just before serving.
